mmm, zucchini and corn quesadilla you turned out so well. the recipe says it serves 4, and i suppose it would if you made more than two, or if you cut them into small dainty wedges. i can also tell you it serves one very hungry girl who ate both of them still too hot standing in her kitchen with a heaping scoop of sour cream.
recipe from ezra pound cake, although i only followed it loosely. (i only used half a small zucchini, half a yellow onion, and some mexican mix grated cheese.)
